Well, there has been a lot going on, what with work, travel, guests at home and the year just rushing by us (can you believe it's JUNE already?).....I am working on a few new projects that I am planning for the blog. Here's hoping & praying that they all work out well!! *fingers crossed*
Meanwhile, I just thought of trying my hands at these very easy Strawberry & Apple-Cinnamon Jam-filled Thumbprint Cookies this evening and they came out pretty decent, so I am sharing the recipe with you all!

Quantity: 15 cookies
Preparation time: 30 mins
Cooking time: 20 mins
Total time: 50 mins
Ingredients
- 1/2 cup butter
- 1/3 cup granulated sugar
- 1 small egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- assorted jam
Directions
- Preheat oven to 180 degree Centigrade. Line a baking tray with parchment paper.
- Mix the flour & baking powder well together.
- Beat together the butter & sugar until light & fluffy. Beat in the egg & vanilla extract until the mixture is smooth & consistent.
- Add the flour mixture in two portions and blend well until incorporated and the dough is formed.
- Roll the dough into small ball, flatten slightly and arrange in rows on the lined baking tray.
- Bake at 180 degrees for around 10 mins. Then take out the tray and make indentations in the middle of each cookie with your thumb or back of a spoon.
- Fill the indentations with whatever flavour of jam you are using, making sure you add the right amount of jam.
- Bake again for yet another 10 mins, or till the edges of the cookies turn slightly golden.
- Take them out and cool for some time.
That's it! Easy-peasy cookies ready to be devoured!!
